🥨 Heavenly Beer Cheese Pretzel Bites – Two Ways to Make the Magic Happen

If you’ve got the time, this method uses a biga (pre-ferment) to boost flavor just like the pros do with artisan bread and pizza dough. Trust us — your tastebuds will thank you.

Ingredients

For the Biga

  • 540g bread flour

  • 243g cool water

  • 1g active dry yeast

For the Final Dough

  • 40g water

  • 12g salt (about 2 tsp)

  • 21g honey or maple syrup (about 1 tsp)

  • Coarse sea salt or Margherita salt (for topping)

For Boiling

  • 2 quarts water

  • 1½ tbsp maple syrup or honey

  • 2 tsp baking soda

  • ½ tbsp salt

🧀 Beer Cheese Sauce (You’ll Want to Drink It)

  • ¼ cup unsalted butter

  • ¼ cup all-purpose flour

  • ¾ tsp garlic powder

  • ¾ tsp onion powder

  • ½ tsp mustard powder

  • ¼ tsp Worcestershire sauce

  • ¾ cup milk

  • 1 cup beer (your favorite!)

  • 2 cups shredded cheddar

  • 1 cup shredded gruyère

  • 1 pack of bacon, cooked and crumbled (reserve 25%)

  • 1 jalapeño, diced (optional)

🌶 Spicy Ranch Dipping Sauce

  • 1 cup ranch dressing

  • 1 tbsp Frank’s RedHot or buffalo sauce

  • ¼ tsp ground black pepper

  • ⅛ tsp cayenne pepper

🔧 Instructions: Expert Method

1. Make the Biga (the day before)

Mix the yeast into the water, let it sit for 10 mins, then pour into the flour. Gently mix (don’t knead!), cover loosely, and ferment on the counter for 18–24 hours.

  1. Cook the Bacon

    Preheat your oven to 400. Line a baking sheet with parchment paper. Lay out your bacon so none of it is overlapping. Cook the bacon for 30-40 mins until crispy. Remove from oven and place on paper-towels to cool. It is okay if you don't get all of the bacon grease off as it is amazing in the beer cheese. Once cooled, finely chop all of the bacon

3. Make the Dough

Cut the fermented biga into chunks. Place in stand mixer. Slowly add 40g water, salt, and honey. Mix 10 minutes until dough is smooth and elastic. Transfer to a greased bowl, cover, and let rise 1 hour.

4. Make the Beer Cheese

Cook flour and butter into a roux. Add spices, milk, beer, then cheese in batches. Stir in bacon and jalapeño. Keep warm.

5. Make the Spicy Ranch

Mix ranch, hot sauce, pepper, and cayenne in a bowl. Chill until serving.

6. Shape the Pretzel Bites

Divide dough into 30 pieces (about 24g each). Roll into smooth balls. Let rise 20–30 minutes.

7. Poach the Dough

Boil water with maple syrup, baking soda, and salt. Reduce to medium heat. Drop bites in for 90 seconds. Transfer to parchment-lined baking sheet and sprinkle with salt.

8. Bake & Cheese

Bake at 450°F for 12–14 minutes, moving to the top rack after 10 minutes for browning.Spoon warm beer cheese on top, then bake 2–3 minutes more. Sprinkle with extra bacon.

9. Serve with Dipping Sauce

Let cool slightly. Serve with that spicy ranch and try not to eat the whole tray.

⏱️ Easy Recipe (Same-Day Shortcut)

Short on time? Skip the biga. Here's how to make the dough from scratch and serve the same day.

Ingredients

  • 540g bread flour

  • 283g cool water

  • 7g active dry yeast

  • 12g salt

  • 21g honey or maple syrup

  • Same boiling solution, beer cheese, and spicy ranch as above

Instructions

  1. Make the Dough: Mix water, yeast, and honey. Let sit 10 mins. Add to flour and salt in a stand mixer. Mix ~10 mins. Let rise 1 hour

  2. Make the Beer Cheese: Cook flour and butter into a roux. Add spices, milk, beer, then cheese in batches. Stir in bacon and jalapeño. Keep warm.
